Chicken Sausage Pasta Salad
So I thought I'd start off with this pasta salad that I created. It's Mediterranean diet friendly, but filling and satisfying. It's pretty simple too, and the sauce used is versatile and can be used on many Mediterranean-style dishes.
Ingredients (two hearty servings):
- 6 ounces of whole wheat pasta
- 2 links of chicken sausage (I used apple chicken sausage), sliced
- 1/2 cup of feta crumbles
- 2 green onions, sliced
- 1/2 cup artichoke hearts, sliced
- 3 Tbsp olive oil
- 1 Tbsp lemon juice
- Salt, pepper, garlic powder, oregano (to taste)
Start by preparing the pasta and warming up the sausage slices according to the package. In a medium bowl, mix the feta, artichokes, and green onion. In a separate bowl, mix olive oil, lemon juice, and spices, to taste. You don't need a lot of salt. Once the pasta is down, rinse to cool, and add to the bowl. Add the cooked sausage and sauce and toss to coat. Makes 2 servings.
